I think my favorite character is Jora, because you find out just how deeply lonely and depressed she is - even if she doesn't want to admit it - and by being a friend, you get her out of that pit and she becomes much more relaxed and fun. A close second are the succubus trio, because of the dynamic between them. Jen is what you expect a succubus to be (always horny), Heather is more relaxed and easygoing, and Cathy is "OK, I changed to a succubus, what happens now??" For all of Jen's being a slut, she still shows a caring side when Cathy almost unintentionally kills the MC. There's others that I enjoy interacting with, but I feel Jora and the succubus trio are the best for me :)
