WOOOOW!!!! Is it just me, or did this game just got a whole lot more grindy to get mats for upgrades and building things?!

I think otherwise.
There's nothing really worth noticeable to grind for unless you are referring to the endgame weapon and armors which is not needed to finish the current version. You can relatively battle dark knights even Grant & Astaroth with Chopping Blade and King CR+BP with ease, which isn't that grindy if you know where to efficiently collect the necessary materials.
Battle outside Whellcum locations can net you better rewards and always do double cum every battle. Checkout the cauldron at Horace's place. It helps upgrading some materials with use of Vegetables.
Well the game is still in early access and we got like almost a year ahead to play the game before official full game release. So the grind is quite reasonable imo.
