I've unlocked the d8 but i don't know how to use it and i find things like shield pouches that are supposed to give me shields but i don't know how or when they do.

They literally drop shields every few rooms. D8 is an active item, active it with space. It rerolls items. (so use it in a shop or a treasure room)
