Is there a good tool / app for tracking time that we spend on the jam? Would be nice to have a start / pause / resume functionality with the set time slot.
Maybe try Toggl - it's free and has some nice integrations when you are idle and not. I use it to track when I'm working.

An alternative I'll suggest is 'Clockify', I have it on desktop and phone too

With a nice API so it works when the PC is off
