Great game! In the beginning levels I felt like I could make some strategic decisions. By the last two though, the best strategy seemed to be to spam the 3-for-1 nukes with as much precision as possible and hope for the best. Maybe I was missing something?

Spamming the uranium grapeshot works for bronze and maybe silver. Grapeshot is used in the strategy for the gold rank but it's not the only thing (carronades are fast enough to distract both carabineers and barbettes in one go, and the slow nature of roundshot makes it work as a decoy and lets you time distractions).
Should've mentioned it in game, but rank is determined by your extra francs at the end of the level, so it can be better to use roundshot as a distraction instead of carronades or grapeshot in some cases.

Nuking people with French music in the back is chef's kiss xDDDDDD. I really had a great time! The game also have quality of life features like speeding up time which is good when you've already fired all your missiles.

Great job! The art style is good and I love how I can toss the paper and the coins around the screen.
There is just one thing that I think could be better and that is readability. The papers are way too similarly colored to the background which makes them harder to see, an outline would be great. And if you made the checkmarks differently colored (like a red cross and a green tick) that would be awesome. But overall this is a solid entry and I really enjoyed playing it!
That's very true, I noticed it was an issue during testing but left it last minute, and ended up just not being able to fix it in time. If I ever decide to do more with it I'll be sure to improve on that front (maybe make it so dragging doesn't count as enabling or disabling a missile type as well).

Absolutely top-notch presentation, and fun gameplay! Making it past the musketmen was difficult, but the speed-up feature made it easy to try lots of different strategies in a short period of time.
surprisingly challenging toward the later levels! I love the franc-y aesthetic with pixel art! Also muskets?? 10/10
